Peanutty, limey, and wonderful. I realize those are both made up words, but you get what I’m saying. You need to seriously try this dish.
If you haven’t noticed by now, I’m very inspired by asian flavors. I think I’m just obsessed with sweet, salty, and umami tastes all coming together in one meal, and this dish has it all. And you thought healthy eaters only ate rice cakes and broiled chicken breasts? Well… not in this house. Flavor is what it’s all about.
Peanut sauce has always been a huge favorite of mine. Sure there are bottled kinds in the grocery store, but as my motto goes, homemade is always best. You can whisk this sauce together in a matter of minutes, so if you happen to have leftovers (you know I ate all of mine… woops!) you’ll have a flavorful sauce to top dishes all week long.
The coconut quinoa is so simple too. I subbed lite coconut milk in for water when cooking, and it makes a wonderfully creamy base for the super flavorful chicken drumsticks.
This will absolutely be added to the monthly recipe rotation when we’re in need of a good meal. Try it out, and hopefully it becomes one of your favorites too.
