
So how do you like my new home? Yes, I updated my website over the weekend and I am still getting settled in, but I LOVE it. There are still some kinks here and there but over all I am really happy with the way it turned out. You see, technology is not my strong suit but I am learning slowly but surely. I am enjoying the challenge but I realized the only thing holding me back is me. I kept telling myself that I am either not smart enough to figure this stuff out or I will screw it up and how will I ever fix it? So after calming all the thoughts racing in my head I found that if I could allow myself to focus and relax I could figure this stuff out. Lucky for me there are some really talented people out there with great tutorials and articles that really made it much easier than I thought. Mostly I needed to get out of the way of myself. Does that ever happen to you?
As a result my weekend cooking was cut short in the kitchen while I worked up the courage to redo my blog so I decided I would squeeze in a classic guacamole. Its a quick easy recipe but so very tasty.
Guacamole is so quick and easy. Often times when I am done making it I wonder why I don’t do it more often. So lets gather up the avocados (make sure they are ripe), jalapeño, red onion, Roma tomato, cilantro, lime, and garlic. Grab your knife and lets start chopping.
For the tomatoes I like to cut them into small chunks. I remove the seeds and juice when I chop them. As a matter fact everything needs to be chopped really small (the onion, cilantro and jalapeño) I cube the avocados to make it easier to mash. The avocado has to be ripe other wise it will not mash properly. Also, I used one jalapeño but I seeded most of it so it would be so hot. That is how you will control the heat of the guacamole. So just because you add 1 jalapeño doesn’t mean it will be hot. but if you leave the seed in that you might have some very spicy guacamole.
Add the juice of 1 lime, salt and the spicy tomato sauce (optional) and add the avocado cubes and mash. Once the avocado is mashed stir in the other ingredients. Its that easy.
