smith apple soup 分類: comparable

Lately all I've wanted to do is spend the day curled up in a blanket cradling cup after cup of coffee.  It's lunchtime and I've already downed my third cup of Joe, I am completely wired but freezing my bum off so think I'll opt for some T2 (herbal) next hifu facial, before I make my 50th trip to the toilet, having consumed my body weight in hot liquids this morning, giving my bladder a serious run for it's money.  Anyone for a mug of soup for lunch ?

Serves 4

1L chicken stock (here's my fave homemade recipe)
700g potatoes, peeled, quartered
1 Granny Smith (green) apple, peeled, core removed, quartered
1/2 tsp sumac
15g ginger, peeled, finely grated
1/4 cup finely chopped coriander leaf and stems, plus 1 tbsp extra
1/2 mild Spanish chorizo, finely sliced
30g butter
1/2 cup thickened cream
Sea salt flakes and white pepper
Combine stock, potato and apple in a large saucepan.  Bring to the boil, then reduce heat to low, cover, and allow to cook until potato is soft (about 20 mins).  Remove from the heat, then add ginger, sumac, 1/4 cup coriander and butter.  Use a stick blender to blitz the soup until it is smooth and there are no lumps.  Stir through the cream and then season to taste with salt and white pepper.

Heat a small frypan over high heat.  Add the chorizo and quickly fry until crispy (about 1-2 mins).   Remove from the heat, add the remaining 1 tbsp coriander and toss to coat the chorizo.  Serve the soup topped with crispy chorizo and drizzled with the chorizo oil from the frypan University Fellow.
