
Normal eggplant → 5 quantities
Fresh tomato → 2 quantities
Garlic → one grain
Egg → 3 quantities
Oil, pepper and salt → in ideal amount

For cooking Mirza Ghasemi First barbeque the eggplants, then peeling them and cut their heads, and whittling them. Now its turn to tomatoes, put them in boiling water then peeling and chop them.
Pummel the garlic and put it in the oil which had been hot already, to fry garlic slightly. Then add the eggplants and tomatoes to it, in that very pan and fry them until their water evaporate and producing oil.
Add some salt and pepper to it and hale the amount to one side of the pan. In empty side of the pan break eggs and mix it till fried. Then mix it with amount.
Now Mirza-Ghasemi is ready. You can put it in plate and serve. To decorate Mirza ghasemi, you can cake eggs and subjoin them on eggplants. Also you can serve it with vegetables.
